Dessert : Baked Apples with Lemon and Tofu
4 Granny Smith apples
raisins
walnuts, finely chopped
dried cranberries
8 oz soft silken tofu
1 ½ tablespoons of maple syrup
2 tablespoons of fresh lemon zest, finely minced
½ teaspoon of cinnamon
Preheat the oven to 375 F.
Partially core the apples: remove the top ¾ of the core but leave the base intact. Drop into the cavity of each apple 1 teaspoon of raisins, 1 teaspoon of minced walnuts and 1 teaspoon of dried cranberries.
Fill the cavities to the top with water.
Pour boiling water into a glass baking dish and put the apples in. Bake uncovered for 35 minutes rotating the apples after 20 minutes to expose each inner half to the heat.
While the apples bake, whisk the tofu in a bowl with maple syrup, lemon zest and cinnamon. When the apples are done (they’ll turn yellow), cut each in half vertically and top each half with tofu mixture. Sprinkle with lemon peel, raisins and dried cranberries.
