Main: Chicken Pizza

1 tablespoon of ground cumin
5 tablespoons of olive oil
Juice of 1 lemon
1 bunch fresh cilantro, chopped
1 whole chicken breast
1/4 cup cooked black beans
2 whole wheat pita breads
Kernels from 1 ear of fresh corn or 1/3 cup frozen
2 green onions, sliced thin
1/2 red onion, diced
A pinch of salt
A pinch of pepper

In a bowl, combine cumin, 1 tablespoon olive oil, lemon and cilantro. Marinate the chicken breast in the mixture for 1 hour. Grill or saute the chicken until it is fully cooked. Let it cool, then chop into large chunks.

Preheat the oven to 350°F.

In a blender, puree the black beans and remaining 4 tablespoons of olive oil.

Put the pitas on a baking sheet, spread with black beans and top with chivekn, corn, onions and salt and pepper.

Bake until the pita is crisp which should take around 10 minutes.
