Starters : Sweet Potato Spread for Pita Chips
2 sweet potatoes
2 teaspoons of grapeseed oil
1 yellow onion, minced
1 tablespoon of maple syrup
2 tablespoons of sesame tahini
1/2 teaspoon of lemmon-pepper seasoning

Bake the sweet potatoes at 350°F until soft which should take between 40 and 60 minutes.
Let them cool. Peel the potatoes and drop them into a blender. Heat the grapeseed oil in a saucepan. Add the onion and saute until dark gold, about 20 minutes.
Add onions to the blender. Add maple syrup, tahini and lemon-pepper. Blend until smooth.
Serve warm or chilled with a big bowl of baked pita chips.
