Main : Calamari Salad
Thursday, January 8th, 20092 tablespoons of olive oil
6 ounces of fresh calamari, sliced into 1/8-inch tubes and tentacles
2 cups of fresh spinach, stems and veins removed
Balsamic vinegar to taste
A dash of olive oil
Dressing
2 plum tomatoes, diced
1/2 cup of leeks, sliced into thin rings
1/2 cup of onions, diced
1/2 tablespoon of capers
Juice of 1 lemon
1 tablespoon of basil
In a large bowl combine the dressing ingredients
In a nonstick saute pan, heat the oil over a medium heat. Saute the calamari quickly which should take approximately 2 minutes.
Combine calamari with dressing and mix well.
Arrange the spinach on a plate. Drizzle light amount of balsamic vinegar and olive oil on spinach. Place calamari and ressing on the spinach and serve.
This recipe will make 4 servings.
