Main : Roast Pork Tenderloin With Pear Vinaigrette

3 ounces of pork tenderloin
1/4 cup of pomegranate molasses
1 tablespoon of pepper
1 teaspoon of chopped fresh mint
2 pears, seeded, peeled and chopped
1 tablespoon of champagne vinegar
1 cup of mixed greens
1/2 papaya, peeled, seeded and sliced thinly
1/2 mango, peeled, seeded and sliced thinly

Preheat the oven to 350 degrees F.

Coat the pork with pomegranate molasses and sprinkle with pepper. Bake for about 8 minutes or until medium (slightly pink in the center).

In a blender, puree the mint, pears and vinegar until smooth; chill.

Arrange greens and fruit slices on a plate. Slice pork thin and arrange on salad. Drizzle desired amount of dressing on the salad and serve.

This recipe will make 2 servings.
