Main : Vegetable Stir-Fry
Monday, January 5th, 2009Vegetable stir-fry is very much a matter of taste and, really, just about any of your favorite vegetables can be used to be thrown in as part of the dish.
1 small head broccoli, broken into florets
1 red pepper, cut into strips
2 courgettes, sliced diagonally
2 carrots, cut into strips
half a small red cabbage, sliced thinly
a handful of green beans, cut in half
1 tablespoon virgin olive oil
5 tablespoons water
1 clove garlic, chopped
1 teaspoon grated ginger
3 tablespoons soy sauce
Wash and chop all the vegetables as required.
Heat the oil in a wok or large frying pan over a high heat.
Add the chopped vegetables and stir fry for 2–3 minutes.
Stir in the ginger and garlic.
Add the water to the pan and stir for 2–3 minutes, then add the soy sauce and mix well.
Serve immediately with rice or noodles (cook according to the instructions on the packet).
This recipe serves 4 people.
